Poached Pears in White Wine l Honest Mum mummy blogger

I have proclaimed my love of all things French before on my blog and this also extends to French desserts in particular as I just ‘j-adore’ poached pears in white wine and I always indulge on this delicious sweet treat when I make my annual pilgrimage to The Cannes Film Festival in the South of France (which you can read about here).

Pears can be poached in anything from wine to caramel sauce.

For this recipe, I poached my pears using a bottle of vegan wine.

I also used maple syrup as a substitute for sugar which still provides a moreish sweetness to the dish!

Serves 8

Ingredients

• 1 bottle of vegan wine
• 1 cinnamon stick
• 1 vanilla bean
• Juice and zest of a whole lemon
• 8 firm conference pears, peeled
• 3 tablespoons of maple syrup

Method

Add the white wine, maple syrup, cinnamon stick, vanilla bean, lemon zest, and lemon juice to a large saucepan and stir together. Bring the mixture to a simmer over medium-high heat for around 5 minutes.

Add your peeled pears to the mixture and reduce to a low heat, poach the pairs for around 20 – 30 minutes until they become tender without being mushy.

Remove your pears and then reduce the remaining liquid to syrup by bringing it to the boil for around 10-15 minutes.

Remove the cinnamon stick and vanilla bean from the syrup and pour over your pears.

Leave to cool until room temperature and serve.

I like mine with a dollop of optional coconut/soya yoghurt.
